The Summer Fancy Food Show is introducing new interactive product discovery experiences as organizers expand opportunities for buyers, retailers, distributors, and emerging food brands at the event in New York City.
The Specialty Food Association said the 2026 show will feature several new activations, including the sold-out Spark Pavilion, the retail-inspired Fancy Bodega experience, and immersive sensory installations designed to increase exhibitor visibility and improve attendee engagement.
The additions reflect wider changes across US trade events, where organizers are increasingly focusing on interactive merchandising, digital product discovery, and experience-led networking to attract both exhibitors and retail buyers.
Among the largest additions is the Spark Pavilion, located inside the Debut District area of the show. The pavilion is designed for early-stage brands making their first appearance at an SFA event.
More than 40 emerging companies are expected to participate, presenting products ranging from high-protein couscous to freeze-dried coffee pods and other trend-focused food innovations.
SFA said the format gives smaller manufacturers a simplified entry point into the trade show while offering retailers, investors, and media early access to developing brands and new product concepts.
Another new feature is the Fancy Bodega activation, which recreates a retail-style shopping environment inside the exhibition.
Attendees will be able to browse products by category, scan featured items digitally, access exhibitor information, and locate supplier booths directly through the system.
The approach mirrors broader grocery retail trends, where interactive merchandising and digital engagement are becoming increasingly important in both physical retail and trade exhibition environments.
Additional activations planned for the event include the SenseMaxxing Experience, based on SFA’s 2026 Trend of the Year. Developed with Brooklyn’s Museum of Food and Drink, the installation will feature sensory-focused experiences including a Smell Synth and Tasting Wall.
The show will also feature a Saudi Dates Pavilion showcasing premium date products, syrups, fillings, and bakery ingredients as demand for natural sweeteners continues to grow across global food manufacturing and FMCG sectors.
SFA is also bringing back the Good Food Mercantile, highlighting brands that achieved Good Food Qualified status and winners of the 2026 Good Food Awards.
The Specialty Food Association said the specialty food industry is now valued at approximately $219 billion, with growing demand for premium ingredients, sustainable sourcing, and differentiated grocery products continuing to influence retail and supplier strategies.

As competition across food industry trade events increases, organizers are placing greater emphasis on immersive experiences, retail-style engagement, and faster product discovery to strengthen exhibitor value and attract more grocery buyers to future events.
